Onion Chutney

If you're looking for something delicious to put in your panino this is for you!

It's sweet, spicy and oniony!

This recipe is very easy and doesn't take that long either, make this in the morning and enjoy by the afternoon.


This recipe makes 1 small jar.

Chilly, garlic and oregano are completely optional. You can also add more or less of these 3 ingredients.



Ingredients:

355g Red Onions – about 3 small onions - Sliced

2 tbs Garlic or 5 fresh Garlic Cloves - diced

1 tsp Chilly or 1 medium Chilly - diced

1 tsp Smoked Paprika

½ tsp Salt

Oregano

20g Balsamic Vinegar

75g Brown Sugar

Olive Oil




Note:

  • You can use light or dark brown sugar.

  • If sealed correctly, this can keep for 1 year.



Method:

  • To a pot add some olive oil just enough to cover the bottom, then add in your onions and on medium heat cook till onions have slightly softened.

  • Add in chilly and garlic, cooking till the onions have completely softened.

Note: If you're using fresh chilly & garlic, cook the chilly off first before adding in the garlic.

  • Now add 2 tea spoons of the sugar, stir and cook till the onions have slightly coloured and softened.

  • Add another tea spoon in, stir and allow the onions to soften even more.

  • Now add the oregano, stir, reaming sugar, stir, spices, stir, balsamic, stir making sure all the ingredients are nicely incorporated.

  • On low heat, simmer on for 15 minutes, stirring occasionally.

  • After 15 minutes, the onions should look caramelized and the mixture should also be glossy and thick.

  • Add your onion chutney into your sterilized jar, tighten the lid and flip the jar upside down to seal. Allow to fully cool before flipping upright.
