Weird But Delicious Creamy Pasta Sauce

Okay, okay I know you're going to think 'WHAT THE HELL IS THIS?' but this is one of those recipes you just have to trust the process!

This was only meant to be a creamy tomato sauce but I looked in the fridge and saw some stuff that needed to be used up and thought maybe this could work..?

And let me tell YOU.. it did work! It tasted soo good, it is now one of my fave sauces and also you can change it up if you like. Skip the dips and just stick with the tomato paste, you will still have a delicious sauce to enjoy.



Ingredients:

4 tbs Tomato Paste

2 tbs Basil Pesto ( optional )

2 tsp Garlic powder or crushed garlic

Salt & Pepper to taste

600ml Cream

300ml Water

150g Red Rock Deli Roasted Caps Dip ( optional )

2 tbs Castlemaine Feta Dip ( optional )

100g Vintage Cheddar Grated

4 tbs Grana Padano

500g Cooked Pasta









Method:

  • To a pot add tomato paste, basil pesto and garlic . Cook for 1 minute.

  • Add cream, water, salt and pepper, mix and bring to the boil.

  • Stir, then add in your dips and cheddar. Mix it in, if you want you can use a whisk to make sure everything is evenly distributed and there's no lumps. Bring this to a simmer and cook till it slightly reduces.

  • Add in the grana padano, mix and simmer till the sauce has reduced. You should be able to wipe your finger down the spoon and the sauce stayed separated.

Note - Make sure to don't reduce it too much, otherwise you'll be left with not enough sauce to coat your pasta.

  • Add the sauce to your pasta and coat well. Enjoy by sprinkling more cheese on top and with some garlic bread to clean up the plate!
