Pretzels

This recipe is a great base to make any flavour pretzel you like.
My fave were the chocolate stuffed ones!

Ingredients:
A 3 ¼ cup Warm Water
2 tbs Caster Sugar
4 Sachets Dry Yeast (28g)
B
30g Salt
1,286g Plain Flour
C
63g Oil
D
2 tbs Baking Powder
2 cup Boiling Water.
Toppings: Salt Sesame Seeds Chilly Flakes Garlic Powder & Herbs
Chocolate Filling:
125g Milk Chocolate
125g Dark Chocolate
80g Butter
45g Milk
Sizing & Bake Time.
Small = 33g for 15mins
Medium = 66g for 15mins
Large = 135g for 20-25mins
Method:
Chocolate filling; Add everything to a bowl & melt. Stir till all combined, then refrigerate till it's semi set.
Mix A, cover and leave for 10mins.
Mix B, then add A mixing till a dough forms.
Add C, mix for 5 minutes in the mixer, then turn out onto a lightly floured bench and kneed by hand for a further 5 minutes. Dough should be sticky but doesn’t stick to hands or table.
Add dough to an oiled bowl, cover and rest for 1hr & 30 minutes
Divide dough into balls and start shaping. Roll into a long snake (not skinny) then shape into a pretzel. If you want to fill the centre with chocolate or caramel, roll into a snake, then with a rolling pin flatten and slightly widen. Pipe your mixture in the centre and then stretch and press the dough together before shaping into a pretzel.
Place each pretzel onto it’s own piece of baking paper. Cover and let rest for 30mins.
In a bowl add D and add the pretzels, removing the paper. Poach for 30 seconds on each side. Place onto lined tray and add your toppings. (if water cools, replace)
Bake at 200c until golden brown.
