Potato Polpette

I loved when my nonna would make these polpette, even now they are my absolute FAVE!

Ingredients:
6 Medium Potatoes – peeled and halved
Herbs
Salt
Pepper
Parmesan
Paprika
Garlic
Onion Powder
1 Egg
Seasoned Breadcrumbs
Note:
You can add sautéed onions and corn in.
Method:
Boil potatoes till fork tender. Make sure they aren’t too soft. Drain and allow to semi cool.
Mash potatoes till smooth, then add all your seasoning and cheese. Mix till well combined.
Add your egg and mix till it comes together. Should easily hold it’s shape and not be super soft or mushy.
Roll potato into oval shapes, making sure they aren’t too thick. Then roll in breadcrumbs and refrigerate for at least 1hr.
Cook in the air fryer or fry in some oil, till golden brown on both sides.
