Potato Polpette

I loved when my nonna would make these polpette, even now they are my absolute FAVE!

Ingredients:

6 Medium Potatoes – peeled and halved

Herbs

Salt

Pepper

Parmesan

Paprika

Garlic

Onion Powder

1 Egg

Seasoned Breadcrumbs


Note:

  • You can add sautéed onions and corn in.


Method:

  • Boil potatoes till fork tender. Make sure they aren’t too soft. Drain and allow to semi cool.

  • Mash potatoes till smooth, then add all your seasoning and cheese. Mix till well combined.

  • Add your egg and mix till it comes together. Should easily hold it’s shape and not be super soft or mushy.

  • Roll potato into oval shapes, making sure they aren’t too thick. Then roll in breadcrumbs and refrigerate for at least 1hr.

  • Cook in the air fryer or fry in some oil, till golden brown on both sides.
