Sauce.. there are soo many ways of making sauce. Every person, every country, every town and family have their own ways of making sauce.
It can be one of the most simple dish, with very few ingredients or it can be difficult with a list of ingredients and steps. But whether it's a simple sauce or a more complex sauce, it is still going to taste amazing!
This recipe I'll say is in the middle.
It does have a list of ingredients, but the method is pretty much short and simple.
A lot of the ingredients listed below are optional, same with the measurements. That's what's so great about sauce. It's so easy to adjust the recipe to suit your own pallet.

Ingredients:
Oil - for cooking
1,750kl Tomatoes - halved or quartered. Depending on size.
2 Capsicums - diced or chopped - optional
2 Brown Onions - diced or chopped - optional
3 Carrots - pealed and grated - optional
6 small Chillies or 1-2 tbs Chilly - optional
3 tbs Garlic - optional
2 tbs Tomato Paste - optional
2 tbs Paprika - optional
1 tbs Sage - You can use any herbs you like - optional
Salt & Pepper to taste
2 shots Red Wine - optional
2 cups Water - optional however if you add the tomato pats, you'll need to add water. Unless you like a thick sauce
Method:
Heat Oil in a pan. Add capsicums and cook for around 5 minutes, then add in your onions and cook till they become translucent.
Add in chilly and cook for around 1 minuet, add in carrots and cook for 3 minuets. Then add garlic and cook till it becomes fragrant, then add in the tomato paste cooking for around 1 minuet.
Turn the heat on low and add in your paprika and herbs, stir till everything is combined, then add in the wine. Cook for about a minuet. We want to give it a chance to cook off the alcohol.
Add in the tomato's and give everything really good stir. Then add salt and pepper.
note - Also at this stage do NOT add a lot of salt. Only add a little bit because if you add too much now and the sauce reduces, you may find your sauce to be too salty and the only way to save it, will be to water it down but you will loose all those beautiful flavours. Taste your sauce at the end and adjust the salt content if need be.
Add the water and stir.
note - With the tomato paste the water will thicken and give you a more loos and saucier sauce.
Bring this to the boil and allow to simmer for 1 hour. Stirring occasionally.
Then take the sauce off the heat and with a hand blender, blitz the sauce till smooth or you can leave it chunky, its up to you. But be carful if you blitz this as it may spit and the sauce is VERY hot.
Simmer the sauce for a further 30 minuets or until you like the taste.
note - Remember to taste your sauce and make any adjustments if needed.
Does it need more salt? More chilly? Do you like the consistency? If it's too thick for
your liking add more water, a little at a time.
