Jelly Slice

A few months ago I went to a café with my cousin and she ordered this dessert. I had never tried or heard of before this time! I know I must have been living under a rock or something haha

Now this is a pretty straight forward recipe, you can either follow this one here or simply make your FAVE plain cheesecake and pour jelly over the top.


This recipe will make one 8 inch slab. If you want each layer to be thinner just half the recipe :)



Base

140g Plain Digestive Biscuits

80g Unsalted Butter melted


Filling

500g Cream Cheese softened

260g Cream

110g Caster Sugar

1 tbs Vanilla Paste

2 tsp Gelatine Powder

2 tsp Water cold


1 pack of Jelly (any flavour you like)







Method:

  • Blitz the biscuits to a fine crumb, then add the butter and mix together till combined.

  • Press down into your lined pan to create the base and refrigerate till needed.

  • Whisk cream cheese, sugar and vanilla till smooth and there are no lumps.

  • Add in the cream and whisk till soft peaks.

  • Mix gelatine and water together, then microwave till it has melted, mix till smooth and pour into the filling and whisk on high till thick. (make sure the gelatine mixture is not boiling)

  • Pour over the base, smooth it out and refrigerate till needed.

  • Make jelly as per instructions on the packet. Allow it too cool so it’s not boiling hot, otherwise it’ll melt the filling.

  • Once the jelly is at room temperature, using a spoon gently pour the jelly over the spoon to prevent splashes and indents in the filling. Make sure it has an even layer.

  • Refrigerate till the jelly is set or leave it overnight.

  • Once the jelly has set, gently cut your desired portions.
