Green Tomato Chutney

Tomato plants are coming to an end and this is a great way to use up all those green tomato's that are still hanging on.
This chutney is super easy to make, it also to be honest with you tastes like an onion chutney. but if you don't want to add onion, just add more tomatoes to make the difference.
This recipe will give you 5 small jars.
Ingredients:
1,500kg Green Tomato’s – cored and sliced thin
5 Red Onions – sliced thin
3 tbs Garlic
1 tbs Chilly – optional
2 tsp Salt
1 tsp White Pepper
2 tbs Smoked Paprika – optional
750g Dark Brown Sugar
1,500kg Malt Vinegar – can substate with Apple Cider Vinegar
Olive Oil
Basil or Thyme - optional
Method:
In a large pot add oil, just enough to cover the bottom of the pot and heat up. Then add in the onions and cook till they have softened.
Add in garlic, chili, salt, pepper and paprika, stir and cook for about 1 to 2 minutes.
Add in the tomato’s, stir and cook for 2 minutes. Then add in the sugar, stir to combine and add in the vinegar. Give everything a really good stir.
Bring to a boil, then simmer with the lid off, for around 2 hours. Making sure you stir it every now and again so it doesn’t stick to the bottom.
The chutney should have significantly reduced, looks like a dark brown colour and the remaining liquid left, shouldn't be completely covering the tomato's.
Place chutney into sterilized jars, clean the rim of the jars and tighten the lids on, and begin the process to seal your jars to preserve them.
