Genovesi Biscotti

This recipe makes 53 biscuits.
You can pretty much use anything as a filling, a sweet ricotta mixture would even be nice!
These biscotti are light and addictive. The tutorial will be linked at the end x
Ingredients:
A 250g Bakers Flour
250g Semolina Flour
200g Softened Butter
200g Caster Sugar
4 Egg Yolks
B
50ml Cold Water
C
Nutella or Lemon Curd
Icing Sugar (for dusting)
Method:
Mix A till somewhat combined, then add B and mix. Dough should be crumbly but holds its shape.
Kneed by hand till a smooth ball is formed, refrigerate for 30mins.
Roll dough out thin but not paper thin. Cut circles and add filling to the centre. Make sure not to over fill them. (in a cookie cutter set, I used the 3rd circle cutter)
Add water to the edges of the dough and with your fingers press closed. (should be in a half moon shape)
Pre heat oven to 220c
Bake for 7 minutes. Should still be soft but also lightly golden.
Either dust with icing while still hot or allow to cool first.
