Focaccia

I have tried making focaccia many times and have failed every time! Except for this time..this focaccia made it! It was beautiful and it's super easy to make, just a little time consuming but let me tell you it is soo worth it!
Ingredients:
A
500g Plain Flour (may need to add more)
10g Salt
B 7g Dry Yeast
325g Warm Water (may need to add more)
10g Honey
Olive Oil
Garlic
Any toppings you like
Method:
Mix A till combined.
Mix B, cover with gladwrap and allow to sit for 10 minutes.
Add B into A, using the dough hook mix till a dough forms. The dough should be super sticky, soft and should resemble the consistency of slime. It should not be extremely wet or dry. It needs to be a wobbly dough. Add more water or flour if need be.
Add dough to an oiled bowl, cover with gladwrap, a tea towel, a blanket and allow to rest for 1 and a half hours.
After 1 and a half hours, stretch and fold dough onto itself. Imagine it has 4 sides and you’re going to pull those sides out and up onto the dough. Allow to rest for a further hour and a half.
Generously oil your pan and place dough in and rub some oil on the top of the dough, press dough into shape, cover and let rest for another hour and a half.
Pre heat oven to 210c
Divide your dough into 550g portions and add to your pans.
Mix some oil and garlic together, make finger indents into the dough and add your garlic oil and any other toppings you like.
Bake for 30 minutes or until beautifully golden brown.
