Easter Cookies

Welcome to my FAVE cookie recipe.

This is such an easy and quick recipe anyone can make them :D You can even make these with your kids as a fun activity!


If you want to make them chocolate replace some flour with cocoa powder. You can even add milk chocolate or dark chocolate chips in replace of the white chocolate OR you can add all 3 :)

You can use Colour Mill to colour your white chocolate, then spread it onto some baking paper and wait for it to dry before braking it into smaller size.

You can add mini M&Ms as well.

Ingredients:

250g Butter softened

207g Dark Brown Sugar

119g Caster Sugar

1 tsp Vanilla Paste

2 Eggs

553g Self Raising Flour

200g Chocolate Chips

Chocolate for decorating (opptional)



Method:

  • Pre heat oven to 160c

  • Mix butter, sugars and vanilla till light in colour, Then add in your eggs and mix till thick and creamy.

  • Add in the flour and mix till a soft dough forms. Dough should be soft but able to hold it's shape.

  • Add in your chocolate chips and mix till well incorporated.

  • Roll 1 tablespoon of dough into a ball and place onto lined baking tray, slightly flatted.

Note - These will spread, so make sure you leave plenty of space.

  • Bake for 10 -12 minutes. The cookie should still be soft when touched, but when cool they will be crunchy on the outside and soft on the inside.

Note - If you don't want to bake all at once, roll dough into a snake at desired thickness, wrap well in glade wrap and refrigerate. This will last up to 3 days. When ready to bake just cut your cookies and bake as normal.

You can even pop your log of cookie dough into the freezer, this should last you a few months. Then defrost, cut and bake as normal.

  • Once cookies have cooled, you can drizzle with melted chocolate and add sprinkles.
