This is a crunchy and basic cookie recipe.

I found this in my mums recipe book, written down on one of my old hospital letters.

Mums really do write recipes down on ANYTHING, and of course some information was missing from the method.





Size & Quantity 1 tsp = 46 cookies 1 tbs = 23 cookies


Ingredients 125g Unsalted Butter softened

190g Caster Sugar

1 Egg

150g Self Raising Flour

1 tsp Vanilla Paste

180g Chocolate chips OR Sultanas

Cornflakes






Method:

  • Preheat over to 180c

  • Cream butter, sugar and vanilla till light in colour.

  • Add in the egg and mix till incorporated.

  • Add in the flour and mix till a dough forms, then add in the choc chip or sultanas and mix till combined.

  • Roll cookie dough into balls.

  • In a bowl crush up the cornflakes a little. You want a chunky crumb.

  • Roll and squish cookie balls into the cornflakes and place onto a lined tray, leaving space in-between each cookie. They spread quite a bit.

  • Slightly flatten the cookies and bake for 13 minutes or until golden brown.
