Chocolate Biscuits

Ooo I do LOVE these little biscuits!

This was meant to be another shortbread recipe however....they just don't taste like shortbread to me?

They are still a very nice biscuit though, so I do recommend giving these a go. I also feel like these would be great for an ice-cream sandwich.


Depending on what shape you deiced to do and what thickness you roll this out, will determine the quantity you get.

I did mine in little squares and other shapes and got over 20 biscuits. They also don't spread when baking.





Ingredients:


A 250g Unsalted Butter softened

60g Icing Sugar

1 tsp Vanilla Paste


B 200g Plain Flour

75g Cornflour

35g Cocoa Powder

¼ tsp Salt



Note:

  • Before baking you can press one side of your shapes into sugar or 100s & 1000s.

  • you can even try rolling the dough into a log, then remigrate.




Method:

  • Cream A till pale in colour, then add in B. Mix till everything is combined. This is going to be a soft dough.

  • Place dough in between two pieces of baking paper and roll out somewhat thin, then refrigerate for 20 minutes.

  • Pre heat oven to 140c.

  • Remove your tray from the fridge and cut your desired shapes, place biscuits onto a lined baking tray and bake for 12-15 minutes.

  • With the remaining dough repeat the steps, roll out, refrigerate, cut and bake
