Chicken Paprikash

This is my version of a chicken paprikash and in no means is it the traditional recipe.

Ingredients:
4 Chicken Breast
1 punnet Mushrooms chopped
1 Onion diced
3 Capsicums diced
4 Chillies diced
2 tbs Garlic
5 tbs Tomato Paste
1 tsp Salt
¼ cup Smoked Paprika
3 tbs Cajun Spice or 1 tsp Cayenne Pepper (optional)
4 cups Stock
5 tbs Corn flour
1 ¼ cup Coconut Cream
Method:
Sear chicken breast on both sides, then set aside.
Sauté mushrooms till soft, then add caps and onions. Sauté till onions are translucent.
Add garlic and salt, cook till fragrant, then add the tomato paste. Stir till everything is coated and cook for 1 minute.
Turn the heat on low and add in the spices. Stir till everything is combined.
Mix corn flour into stock before pouring into your pot. Stir then add coconut cream. Bring to a boil, constantly stirring so the mixture doesn’t clump together.
Add chicken back in and cook for 30 minutes on low. Remove the chicken and cut into pieces before adding it back to the pot.
Simmer till mixture has thickened up and chicken is fully cooked.
Serve with rice or mush potato.
