ANZAC Biscuits

I baked ANZAC biscuits for the first time this week, I followed the Coles recipe and it just didn't seem right. whether I did something wrong or the recipe was off, I don't know. They were still nice but I wanted to prefect them.

So I went online, found a recipe, took the Coles recipe and messed around with it, combining the two and hopped for the best.

I tried it out last night and OMG! it worked and they tasted HEAPS better, so I thought I'd share the recipe with you guys.


This is a super easy and quick biscuit recipe to make and I guarantee everyone will love them.


This recipe makes around 30 biscuits.





Ingredients:

170g Plain Flour

80g Coconut

90g Rolled Oats

200g Dark Brown Sugar

125g Unsalted Butter

65g Golden Syrup

1 tsp Bic Carb

2 tbs Water boiling


 

 

 

 

Method:

  • Pre heat oven to 180c

  • Melt butter, golden syrup and water together, either in the microwave or on the stove. Set aside to cool down for 5 minutes. (Do not let it boil)

  • In a bowl combine flour, coconut, oats and sugar. Give it a really good mix.

  • Add bi carb into the butter mixture and mix until it become lighter in colour and foamy. Then add it into the flour mixture.

  • Using your hands or a spoon, mix until everything comes together.

  • Get 1 tablespoon of mixture roll into a ball. Place onto a lined baking tray and slightly flatten. These will spread.

  • Bake for 7 minutes and they should be lightly golden brown. These will also be quite soft once out of the oven, so allow them to fully cool before moving. Once cooled these will be soft and chewy. If you want them crunchy bake for 10 minutes just keep an eye on them so they don't burn.
